Jenny is a great cook!
When she was in high school, her father and I often wondered if Jenny would be able to survive when she wasn't home to eat.
Surprisingly,
she did.
Since then,
Jenny has become a wonderful cook!
Being a vegetarian,
Jenny has developed some delicious recipes!
She allowed me to share this one with you.
Jenny's Nachos
Ingredients:
One bag of blue corn chips
One 30 oz can of black beans
(I prefer pinto, but the choice is yours.)
One 30 oz can of chopped tomatoes
A handful of shredded cheddar cheese
1) Empty the beans and tomatoes into a colander and drain.
2) Rinse well.
3) Place a layer of blue corn chips on the bottom of a microwave safe plate.
4) Divide the beans and tomatoes into 4 equal servings.
5) Place one serving on top of the corn chips. Refrigerate the rest of the mixture.
6) Top with a handful of shredded cheddar cheese.
7) Microwave for about 30 seconds to one minute, just long enough to melt the cheese.
8) Enjoy!

Yum - sounds pretty much like the Nacho's the mailleman makes, then again he is also a vegetarian, & personally I prefer this type of nacho anyway.
