Jenny's Been Cooking Again!


And I have her recipe for salad dressing! It is so good! Although you can't find it on her website, she said that I could share it here. Don't forget about her etsy store! What do you think the main ingredient of her recipe is?

Here goes:

Jenny's Salad Dressing

1-2 red peppers stem and seeds removed
Puree in a blender of food processor with
enough EVOO (extra virgin olive oil)
to blend the red peppers.
Add lemon juice, salt, pepper, lemon juice to taste.
And that's all there is to it!

  1. That sounds delicious! I do love roasted red peppers, and I wonder if this would work using peppers that have been roasted or with a mix of both?

    P.S. I love that shopping cart full of ginormous peppers! If that were real, James' eyes would pop out of his noggin because he loves red peppers, too!

  2. Jenny says, "I imagine that roasted red peppers would work. You might have to add some water though. It would probably taste really good." She doesn't have a google account so I am posting as she dictates!
