These are my version of
Black Bean Brownies!
Very Good!!!!
I found a recipe for these on several different sites.
This was the easiest version.
Take 1 can of black beans.
Rinse. Pour the beans back in the can.
Add water to the top.
Pour the beans and water into a blender or food processor.
Blend until smooth.
Add
1 box of brownie mix.
I used 1 box of Gluten Free Chocolate cake mix.
Bake according to package directions.
I made 48 of these beautiful little cakes.
They are only 1 point each in Weight Watchers.
Now, remember,
there are no eggs or oil.
They are a little dry.
Eggs and oil would raise the points.
I also think using brownie mix would give these little cakes more moisture.
However, they sure do take care of a chocolate craving for me!!
If you have the extra points,
top each little cake with a Hershey kiss.
Pop in the microwave for 30 seconds.

They are amazing!!!!
That's a total of 2 points per cake!!!

Black beans? In brownies? Wow! I never would have guessed. When I was teaching our cook was very creative. Sometimes they would get huge shipments of some ingredient that you know kids would never eat. Like colossal cans of sauerkraut. She would make the moistest chocolate cake with that stuff. It was amazing! I bet that might be a very lo-cal substitute. And maybe count as veggies? ;-) Good for you Miss Mallory! Enjoy the day! Erin
