The Great Chile Cookoff Recipe

At last,
the Great Chile Cook Off has come to the church I attend.
It's tonight.
I entered.
Since we have to provide a recipe, 
I'm giving you a sneak peek!
It's quick and easy to make,
and
absolutely delicious!!!
Are You Ready?
Here Goes!

Mountain Man Gluten Free Chile

Here's what you need and what you do with it!

2 pounds of hamburger meat.
Brown this.
Garlic and a small onion.
Chop.
I used about 5-6 cloves.  Since I love garlic, I would have used the entire head, but this is a cook off and other people might not like garlic like I do.
Peel and chop the onion.

Two large cans of PINTO Beans.
DO NOT EVER USE 
kidney beans!
Kidney beans are God's mistake.
He forgot he had already invented the pinto bean.

Two packets of chile seasoning.
I like to use one HOT and one mild.

Two cans of chopped tomatoes.  I used the ones that have garlic in them.

Potatoes.
I used 6 small ones that I had precooked in the microwave.

Before you add the salt to taste, be sure to add the small package of frozen corn that I forgot to photograph.
Add salt to taste.

Take your browned hamburger and drain it well.

I put mine in a colander and let it drain until it was finished, then I pushed on it with a paper towel to get out as much fat as I could.

Put it all in your biggest crockpot.  This recipe makes a lot!

I programed my crock pot for 8 hours.  
I put the chile in the crock pot over night.
I took it out this morning and cooked it.
I have to have it and the recipe at the church by 5:15 PM.

Six Word Story Sunday - Easy Peasy Rhubarb Sauce Recipe

Rhubarb Sauce

Dice Rhubarb
Cook Rhubarb
Add Sugar

Just to expand a bit...
I cut up about 3 big stalks of rhubarb.
(About 2 Cups)
Be sure to remove the leaves because they can make you sick.
I don't add water, but I cook the rhubarb in the microwave until it is soft and mushy.  
You should still see chunks.
I add Splenda to taste.
You can add sugar to taste, but I add Splenda.
Easy Peasy!

Easy Peasy Spring Rhubarb Sauce

This is an easy recipe to help you use your rhubarb. If you don't grow your own, pick some up at your local farmer's market.

Here's what you do to make this easy, peasy spring rhubarb sauce.


1) Cut a bunch of rhubarb from the garden or buy some from your Farmer's Market.



















2) Slice the rhubarb into bite sized pieces and place in a microwaveable dish or bowl. I always cover mine when I cook it.




















3) Cook, covered, in micorwave for, approximately, 5 minutes on high.
You'll know the rhubarb is done when it's soft and liquidy. (I have found that I don't even need to add water.)

















4) Since I don't use sugar, I add Splenda at this point. (If you use sugar, I can only assume that you would add the sugar to taste before you cook the rhubarb.) I add Splenda until I like the taste.

It's No April Fool's Joke!


Jenny is a great cook!
When she was in high school, her father and I often wondered if Jenny would be able to survive when she wasn't home to eat.
Surprisingly,
she did.
Since then,
Jenny has become a wonderful cook!
Being a vegetarian,
Jenny has developed some delicious recipes!
She allowed me to share this one with you.

Jenny's Nachos
Ingredients:
One bag of blue corn chips
One 30 oz can of black beans
(I prefer pinto, but the choice is yours.)
One 30 oz can of chopped tomatoes
A handful of shredded cheddar cheese

1) Empty the beans and tomatoes into a colander and drain.
2) Rinse well.
3) Place a layer of blue corn chips on the bottom of a microwave safe plate.
4) Divide the beans and tomatoes into 4 equal servings.
5) Place one serving on top of the corn chips. Refrigerate the rest of the mixture.
6) Top with a handful of shredded cheddar cheese.
7) Microwave for about 30 seconds to one minute, just long enough to melt the cheese.
8) Enjoy!
