I Hate, Loathe, Despise, Detest Black Beans, Except when fixed like this...

Don't they look wonderful?
These are my version of
Black Bean Brownies!
Very Good!!!!
I found a recipe for these on several different sites.
This was the easiest version.

Take 1 can of black beans.
Rinse.  Pour the beans back in the can. 
Add water to the top.
Pour the beans and water into a blender or food processor.
Blend until smooth.
Add 
1 box of brownie mix.
I used 1 box of Gluten Free Chocolate cake mix.
Bake according to package directions.

I made 48 of these beautiful little cakes.
They are only 1 point each in Weight Watchers.
Now, remember,
there are no eggs or oil.
They are a little dry.
Eggs and oil would raise the points.
I also think using brownie mix would give these little cakes more moisture.
However, they sure do take care of a chocolate craving for me!!
If you have the extra points,
top each little cake with a Hershey kiss.
Pop in the microwave for 30 seconds.
O.M.G.
They are amazing!!!!
That's a total of 2 points per cake!!!
WOW!

I Hate Banana Bread!!!

But I LOVE these muffins!

So, I had two bananas that were getting way too ripe.
Since I am on Weight Watchers, I have to be careful about what I eat.
Bananas are great, but I really wanted some of the 
"forbidden" foods.
(Truthfully, there are none, but in my mind, there are some I would love to eat.)
Anyway,
I had found a recipe on Pinterest for 
Gluten Free
Banana Muffins.

Like I said,
I HATE banana bread,
however, these are so good! and only 3 points per muffin.
I have mine bagged two to a bag because these muffins are half the size of a regular muffin.  Each one is only 1.5 point a piece!!!
Well,
as it turns out,
I only had 1 egg, and the recipe calls for 2 eggs.
I substituted a cup of unsweetened apple sauce for the extra egg.
Turns out that was okay,
and these muffins are 
Delicious!
While you read this, I will have already enjoyed them for breakfast!!!

I have a "told" and I joined Weight Watchers

Yes, I have a told.  I feel awful right now.  As you read this, I hope I will feel better since I wrote this yesterday in case I didn't feel like writing later.  Whew!!  What a run on sentence! 

Maybe I should have waited until I felt better to join Weight Watchers, but night before last, I didn't feel this bad.  This told makes it a little more difficult to get with the program, however, she said, the one good thing is that I am already thinking about my food choices.  I can still taste food, so that's good.  I don't need to loose a lot of weight.  In truth, I'll be happy with 7 pounds, but my goal is 15.  My jeans are too tight, and I refused to buy up a size.  I won't do it. So, I knew I had to do something soon.

I don't look at joining Weight Watchers  as a resolution because as we know, most resolutions are never kept for any length of time.  I'm making a change in my eating habits, again.  I did very well with Weight Watchers before, and I plan to do this again. 

So, wish me luck!!!  I want my skinny jeans to fit me really well again.  They are just plain snug right now. 

So my plan for this afternoon is to sleep as much as I can.  My chicken is already in the crockpot cooking, so it will be ready for supper.  I have one snack planned.  I'm looking forward to this journey.

Oh, I also have a few windows open to get out the old germs and bring in fresh air!  I know, the temperature right now is 9 above zero.  Yes, it's cold, but I want to clear the air.  I'll close the windows in a bit.  So, for now, I'm off to nap and dream of food points as I sleep.
