Here goes:
Jenny's Salad Dressing
1-2 red peppers stem and seeds removed
Puree in a blender of food processor with
enough EVOO (extra virgin olive oil)
to blend the red peppers.
Add lemon juice, salt, pepper, lemon juice to taste.
And that's all there is to it!

That sounds delicious! I do love roasted red peppers, and I wonder if this would work using peppers that have been roasted or with a mix of both?
P.S. I love that shopping cart full of ginormous peppers! If that were real, James' eyes would pop out of his noggin because he loves red peppers, too!
