I've read that people who live with gratitude are happier people who sleep better at night. I want to be one of those people!

I've been keeping 'the gratitude journal' for over one year now (Rhonda Byrne, The Secret Book of Gratitude). It changed a lot in my life! In the beginning I wrote a long list every day, now perhaps 2 or 3 times a week. I really, really recommend this kind of journaling :-)
What is this - No comments! I don't necessarily write them down but every night before I fall asleep I tend to recount what I am thankful for. It seems to put my mind at ease rather than asking for something I don't have. My mother used to say "There are needs and there are wants". I think it's better to be thankful for having those needs met rather than pineing away for the next "want".
Writing down my blessings is something I've been aiming for for a while now. In fact, it's one of my goals for the year. I'm not doing such a great job of it and will probably work some more on this next year. I like your idea of putting it here on your blog. Wishing you all the best to achieve this goal of your own.
